Our story

A family table since the very beginning

The story of Casa Luis begins long before the restaurant opened its doors in Smithtown.

Spain

Born in Spain, raised in Brazil

Our founder, Luis Estevez, was born in Spain. Following the aftermath of the Spanish Civil War, his parents immigrated to Brazil in search of new opportunities, and Luis later joined them there at the age of 15.

Growing up in Brazil, he developed a passion for hospitality and entrepreneurship, eventually opening his own café and bar. It was there that he discovered his love for serving people and creating a welcoming place for family and friends to gather.

From dishwasher to head chef

In 1968, driven by the dream of a better life, Luis ventured to New York City. He began working at the well-known Greenwich Village restaurant El Faro, starting as a dishwasher.

Through hard work, determination, and natural talent, he quickly rose through the ranks to become the head chef. From 1969 to 1978, Luis ran the kitchen, gaining invaluable experience and building the foundation for his future.

Falling for Long Island

During those years, Luis spent many of his days off exploring Long Island. He fell in love with its communities, beaches, and small-town charm. While many people thought he was crazy to leave Manhattan for Long Island, Luis knew it was where he wanted to build his future.

He opened the Iberian Restaurant in Huntington alongside his cousin, Manolo. After a successful 11-year partnership, the two decided to pursue separate paths. Luis and his wife then took a leap of faith and opened Casa Luis in Smithtown.

A family business

From the beginning, Casa Luis was truly a family business. Luis, his wife, Carmen, and their three children — Luis, Antonio, and Delia — worked together to build the restaurant into what it is today.

Guests quickly became family, and the restaurant became known for its warm hospitality, authentic Spanish cuisine, and welcoming atmosphere.

Passing on the recipes

Luis remained the heart of the kitchen, serving as Executive Chef until the age of 76. When the COVID-19 pandemic forced restaurants to adapt to a takeout-only model, Luis decided it was finally time to step back and enjoy retirement.

Before doing so, he ensured that Casa Luis would continue in the hands of people who shared his passion and commitment. He spent years mentoring the chefs who continue his legacy today. Joel, who joined the restaurant in 1989, has been part of the Casa Luis family for more than 36 years. Jose, who joined in 2001, has dedicated more than 25 years to the restaurant. Together, they continue preparing the dishes and recipes that guests have loved for generations.

Today

Delia carries the torch

Today, Luis has passed the torch to his daughter, Delia, who proudly carries on the family tradition. While much has changed over the years, the mission remains the same.

Carmen

In Loving Memory of Carmen

For decades, Carmen greeted every guest at the door of Casa Luis as if they were walking into her own home. Many of you knew her warm smile, her kindness, and her famous homemade rice pudding.

She built Casa Luis side by side with Luis, and her spirit lives on in everything we do. We miss her dearly, and we will keep welcoming you the way she always did.
